Sweet Potato Puree

Preheat oven to 425























2 Medium Sized Sweet Potatoes
Wash your sweet potatoes +pat dry
Then I wrap mine in foil 
Bake approximately 40 minutes 
Remove from oven and unwrap
Allow your sweet potatoes or yams to cool 
When cool enough to handle, using a fork remove the flesh from the skin 
Put your potato meat into your @vitamix blender blending only until smooth.  

(I've also done this just using the back of my fork) 
Store in a self sealing preserve jar like this one and it will keep for up to 3 weeks! 
I'll be using a lot of this in my recipes leading up to the holidays so I thought it might be helpful to provide the simple steps to prepping the puree here. 
Yields approximately 1 cup puree
