Homemade Enchilada Sauce

So this is my first homemade sauce recipe! I've made this from scratch totally freestyled it and it turned out perfectly!

My family loves Enchiladas it is now a 4th generation family staple. You can count on enchiladas at least once a month and at most family holidays and occasions. And I'm nearly positive I'm the first in the fam to construct an enchilada sauce of my own free of preservatives, animal products, gluten and sugar. ( I really don't know that im the first for a fact but I'd like think so.)
Chipotle in Adobo

1.5 cups strained tomato
1.75 cups water
2 tblspoon flour
2 tblspoon oil (I used veg. oil this time)
1 tblspoon cumin

5 garlic cloves minced
1 small onion

3-4 tblspoons (1/3c) chipotle in adobo blended with garlic

Combine all ingredients 25-30 minutes simmer. The longer the simmer the deeper the layer stir often.
