Molten Chocolate Hazelnut Cupcakes

Ferrero Rocher Cupcake
Gilding the fondant was as easy as applying the old gold luster dust to the rolled and cut fondant with a make up triangle instead of using a brush. It was so fun and SHINY!

This months challenge was chocolate at No One Puts Cupcake in A Corner! And I kept thinking of something holidayish and chocolatey and the little Ferrero Rocher candies came to mind. So I made the candy in a cupcake form! I used a recipe for a molten chocolate cupcake and added the little hazelnut goody and wrapped it all in a tasty gold fondant! Yummy surprise you almost can't tell the difference between the candy and the cake. The molten chocolate just spills out its so warm and tasty!

Try it yourself, here's the recipe!
4 tbs. soft margarine
generous 1/4 cup superfine sugar
1 large egg
scant 5/8 cup self-rising flour
1 tbsp. unsweetened cocoa
2 oz. semi-sweet chocolate
4 hazelnuts, broken into halves

Preheat oven to 375. prepare 8 baking cups in a muffin pan,

Put the margarine, sugar, egg, flour and cocoa in a large bowl and beat with an electric hand mixer, beat until smooth.

Spoon half the batter on the bottom of cups. Using a teaspoon, make an identation in the center of each cake. Break the chocolate evenly into 8 squares and place a piece of chocolate and a nut half in each indentation, then spoon the remsaining batter on top.

Bake the cupcakes in the preheated oven for 20 minutes, or until well risen. Top with fondant. For a lighter taste top your cupcake with a whipped topping!

8 oz rolled fondant
2 tsp Old Gold Luster Dust
2 tsp lemon extract
1 foundation applicator triangle
2 tbsp. confectioners sugar

In a small bowl mix dust and extract til combined!

Dust a cutting board and your rolling pin with confectioners sugar.

With a sugar-dusted rolling pin, roll out your fondant and with a round cookie cutter cut 8 circles. using foundation triangle apply luster dust mixture to each circle until you reach your desired color. Add more dust to reach your desired sparkle! Place circles on top of each cupcake and pinch the sides of the fondant to give it a foiled look.
