Iron Cupcake Cheese Challenge: Watermelon, Goat Cheese and Basil

For the Iron Cupcake Earth Cheese Challenge I decided to take a cupcakey spin on one of this summer's very popular foodie trends; Watermelon, Basil and Goat Cheese Salad this salad in particular is from foodluvin.com.





So i've created a Watermelon Cupcake Frosted with a Goat Cheese Frosting and garnished with some beautiful fresh Basil and of coarse the little mouse couldn't resist such a cheesy delight!

Watermelon Cupcake
1 Box French Vanilla cake mix
1 Tablespoon Melon Jello Mix
2 Tablespoon Watemelon Juice
1/4 cup chopped watermelon
1/3 cup and 1 teaspoon Vegetable Oil
3 eggs
1 1/4 cup water
1/4 teaspoon red food coloring (optional)

Preheat oven to 350
Whisk together all ingredients except juice and coloring.
Add your juice and optional food coloring and stir until combined.
Evenly distribute batter in cupcake pans and bake for 17-19 minutes.

Goat Cheese Frosting
4 oz Goat Cheese (softened)
1 1/2 oz Cream Cheese (softened)
1 1/4 Tablespoon unsalted Butter (softened)
1 Tablespoon heavy cream
1/4 teaspoon watermelon juice (optional)
6 1/2 oz. sifted Powdered Sugar
1/2 teaspoon Vanilla Extract

Beat with an electric mixer Cheeses, and butter.
Add Vanilla and heavy cream. Beat. Then add watermelon juice followed by adding your sifted sugar gradually, still beating for about 2 minutes.

Melon Mouse
1 small chunky triangular watermelon piece (body)
2 tiny basil leaves (ears)
3 small chips of dark chocolate (eyes and nose)
1 toothpick (tail)


It is quite yummy, I sliced the Watermelon flavored cupcake into three parts and topped the bottom two layers with the goat cheese frosting and a watermelon triangle, it makes me think of a strawberry shortcake except with watermelons :) A Fun sexy little treat. I hope the little mouse isn't the only interested party because competition is fierce and I need lots of nibbles (votes) to win this fun Challenge!
