Chicken salad is fun because you can personalize it and have your own family recipe so add or subtract as you go along and really enjoy. This recipe was inspired by The Gilded Rose Manor tea house where I held my first job, the chicken salad there was scrumptious.
4 boneless, skinless chicken breast
¾ cup mayo
3 stalks of celery, diced
1 small onion, diced
3/4 tablespoon curry powder
2 tsp mustard
¼ currants
2 tblsp diced red onion
1 hardboiled egg, diced
1 tsp kosher salt
1 tsp freshly ground pepper
¼ cup chopped green onion
Boil your chicken with curry powder and a sprinkle of salt and pepper (about 30 minutes). While your chicken is boiling prepare your ingredients.
Begin boiling your egg as your chicken finishes up in separate pot. Then cool and dice.
Once your chicken has boiled through drain and chop into small cubes (doesn’t have to be perfect) or bite size pieces. Shredding is ok or you can just put the chicken in a food processor to chop.
In a large bowl throw in chicken, egg and all the remaining ingredients and season to taste! Chill and enjoy!
